Buttery buns filled with olives are my favorite for a Sunday Brunch.
Makes 6
Ingredients
500 gr ap flour
10 gr salt
7 gr yeast
7 gr honey
1 large egg
250 ml warm milk
150 ml olive oil
150 gr black olives
36 gr butter, room temp
30 ml milk
Sesame seeds
Instructions
1. In a stand mixer bowl, combine flour, salt, and yeast. Add honey, egg white, milk, and 125 ml olive oil. Knead for 7-8 minutes at low speed. Cover the bowl with cling film and let it proof for 1 hour.
2. Finely chop half of the olives and thinly slice the rest. In a small bowl, mix olives and 25 ml olive oil.
3. Preheat the oven to 180°C/350°F. Prepare a baking sheet with parchment paper.
4. Divide the dough into 12 pieces, and shape them into balls. Roll one at a time to 1/4 inch thick circles. Spread 3 gr of butter all over the dough and place 1.5 tbsp of the olive mixture along the diameter. Roll the dough into a 12-inch log shape. Twist two of the rolls and shape them into a circle. Transfer to the baking sheet.
5. Prepare an egg wash with egg yolk and the milk. Gently apply and top with sesame seeds. Bake for 20 minutes. Let it cool. Enjoy!
