Simit is a traditional circular bread covered with sesame seeds from Turkey that is often served for breakfast. They are literally sold everywhere in Turkey by street vendors and bakeries. They have a crustier exterior compared to the regular bagels but also have a soft interior. The perfect pairing for Simit is definitely tea.

Ingredients
500 gr bread flour
5 gr yeast
5 gr salt
5 gr sugar
325 ml water, around 32°C/90°F
For the topping;
70 gr molasses
60 ml water
10 gr ap flour
120 gr sesame seeds
Instructions
1. In a small bowl, combine yeast, and sugar. Let it sit for 5-10 minutes until bubbles form on the surface. Place bread flour, salt, the yeast mixture, and water into a stand mixer bowl and mix at low speed for 5-7 minutes. You can also knead it by hand for 10 minutes until the dough becomes soft and smooth. Cover the bowl with cling film and leave it to proof for 1 hour in a non-working light-on oven.
2. Mix molasses, water, and flour in a shallow dish, set aside. Toast the sesame seeds in a pan until they are light golden in color. Transfer into a large plate to cool.
3. Preheat the oven to 220°C/425°F. Prepare two baking sheets with parchment paper.
4. Divide the dough into 12 equal pieces and shape them into balls. Grab two pieces, cover the rest with the same cling film, and roll the two into a 40 cm/15-inch tube shape. Twist two of them and shape them into a ring. Dip both sides into the molasses mixture, then into sesame seeds. Transfer to the baking sheet, continue with the rest.
5. Bake for 13-15 minutes until golden brown. Leave them to cool and enjoy!
