As of yesterday, I am fully vaccinated!! What better way to celebrate the occasion with the iconic quarantine bake that is the Banana Bread. Honestly, I still don't know why Banana Bread got so popular, but I am not mad about it. The thing that makes me mad is the Banana Breads without walnuts. I mean c'mon, that's a crucial mistake.
Makes 1 loaf
Ingredients
113 gr unsalted butter, room temp
140 gr sugar
2 large eggs
220 gr ap flour
1 tsp baking soda
1 tsp baking powder
Pinch of salt
1 tsp vanilla extract
2 large or 3 small ripe bananas, mashed
120 gr walnuts, chopped
For the topping
1 banana
1 tsp demerara sugar
Instructions
1. Preheat the oven to 180°C/350°F. Grease a loaf pan with softened butter.
2. In a large bowl, cream the butter and sugar with a spatula or hand mixer until light and pale. Add the eggs and mix to combine. Sift flour, baking soda, baking powder, a pinch of salt. Mix thoroughly for 30-60 seconds. Add vanilla extract, mashed bananas, and chopped walnuts, and mix to combine. Pour the batter into the loaf pan.
3. Cut 1 banana lengthwise and place them on top of the batter. Sprinkle demerara sugar. Bake for 50-60 minutes, or until a skewer comes out clean. Check around the 40-minute mark and cover with aluminum foil if needed to avoid browning too much. Leave it to completely cool. Enjoy!
