One of my recent obsessions is to convert a typically sweet meal to savory. Today I have a dutch baby in a cast iron topped with avo, arugula, cherry tomatoes, fried egg, and drizzle of balsamic glaze.
Makes 2 15cm/6inch skillets
Ingredients
3 large eggs
125 ml milk
65 gr ap flour
1/2 tsp salt
3 tbsp unsalted butter
For the topping;
Avocado
Arugula
Cherry Tomatoes
Fried Egg
Balsamic Glaze
Instructions
1. Preheat the oven to 220°C/425°F.
2. In a blender or food processor combine eggs, milk, flour, and salt. Melt the butter in the skillets until it becomes foamy. Divide and pour the batter into the skillets and cook in the oven for 15 minutes.
3. Allow the pancake to cool for 5 minutes. Top with your toppings. Enjoy!
