Makes 15 cm/6 inch Cake
Ingredients
125 gr dark chocolate, chopped or chips
45 gr unsalted butter
3 large eggs, room temp and separated
80 gr sugar
Pinch of salt
Cocoa powder
Instructions
1. Preheat the oven to 180°C/350°F. Prepare a 15 cm/6 inch springform pan by buttering the bottom and sides. Place a round parchment paper at the bottom. Sift cocoa powder to cover the bottom and sides.
2. For the cake, place chocolate and butter in a medium-sized bowl and melt them in a microwave for 30 seconds interval. Stir them between each interval. Let it slightly cool once it's completely melted.
3. In a large bowl, whisk egg whites for 30 seconds. Add sugar, and a pinch of salt, and continue to whisk until it forms stiff peaks. Fold eggs whites into the chocolate mixture with a spatula in 2 batches. Pour the batter into the pan and bake for 25-30 minutes. Let it cool.
4. Remove the cake from the pan, and sift cocoa powder on top. Enjoy!
