Anything with lemon is my weakness… my kryptonite… my Achilles heel. Simply CANNOT RESIST. I eat 3 thiccck slices of my amazing Lemon Drizzle Cake per day, one for breakfast, lunch, and dinner 😏 I’ve heard that’s the secret of long and healthy life!!
Makes 1 loaf of Cake
Ingredients
For the cake
226 gr unsalted butter, room temp
175 gr sugar
4 large eggs
Zest of 2 large lemons
225 gr ap flour
2 tsp baking powder
Pinch of salt
For the Lemon Drizzle
Juice of 2 large lemons
75 gr sugar
For the Lemon Glaze
Juice of 1 large lemon
200 gr powdered sugar
Instructions
1. Preheat the oven to 180°C/350°F. Line a loaf pan with parchment paper.
2. For the cake, in a large bowl, beat butter and sugar with a hand mixer for 5 minutes. Alternatively, you can use a stand mixer with a paddle attachment. Add 1 egg at a time, and beat until combined. Sift flour, baking powder, and salt, and fold to combine. Transfer the batter to the loaf pan and bake for 45-50 minutes.
3. While the cake is baking, prepare the Lemon Drizzle by whisking lemon juice with sugar in a small bowl. Set aside.
4. While the cake is still warm and in the loaf pan, poke holes with a skewer. Soak the cake with Lemon Drizzle. Leave the cake in the pan to cool.
5. For the lemon glaze, whisk lemon juice and powdered sugar. Remove the cake from the pan and decorate the cake with the glaze. Enjoy!
