I shared physical gift ideas for Christmas a couple of days ago, but I believe homemade cookies made with love are much better as a lot of thought, time and effort goes into making them. Here is my recipe for my favorite crispy almond and vanilla sablé cookies.
Makes 16
Ingredients
113 gr (8 tbsp) unsalted butter, room temp
60 gr (1/2 cup) powdered sugar
1 large egg
5 gr (1 tsp) vanilla extract
1 gr (1/4 tsp) almond extract
120 gr (1 cup) ap flour
60 gr (1/2 cup) almond flour
40 gr (1/3 cup) cornstarch
Pinch of salt
For the topping;
30 gr (1/4 cup) powdered sugar
8 ml (1 1/2 tsp) water
Sliced almonds
Instructions
1. Preheat the oven to 180°C/350°F.
2. For the cookies; beat butter and powdered sugar with a spatula or hand mixer. Add egg, vanilla, and almond extracts and mix to combine. Sift ap flour, almond flour, cornstarch, and salt, fold to combine. Wrap in cling film and leave in the fridge for 30 minutes.
3. Generously flour a clean surface and a rolling pin. Roll the dough to a round shape with 1/3 cm (1/8 inch) thickness. Cut circles with a 9cm/3.5inch cookie cutter and place them on a baking sheet with parchment paper. Let the cookies chill in the fridge for 15 minutes. Bake for 10-12 minutes and leave cookies to cool.
4. Meanwhile, whisk powdered sugar with water for the glaze. Decorate the chilled cookies with the glaze and top with sliced almonds. Enjoy!
