There are traditional holiday bakes that everybody knows and loves, and there are traditions for your own family. This is one of mine. We always have Tiramisu as our Christmas dessert. You might ask why?
This is my absolute favorite dessert. Nothing else can beat a perfect Tiramisu for me. I always always always have it when I am ordering from an Italian restaurant, and I always have a stash of ladyfingers at home, ready for emergency cravings. Don’t tell but I prefer the full-on egg method, but you know that’s not the safest 🙄
Makes 15x15 cm (6x6 inch)
Ingredients
240 ml (1 cup) strong coffee
30 ml (2 tbsp) Marsala wine or dark rum
3 gr (1/2 tsp) vanilla
3 egg yolks
65 gr (1/3 cup) sugar
180 gr (3/4 cup) mascarpone
200 ml (3/4 cup + 4 tsp) heavy cream, cold
16 ladyfingers
4 gr (1/2 tbsp) cocoa powder
Instructions
1. Combine coffee, rum, and vanilla in a shallow bowl. You can leave out rum for the non-alcoholic version.
2. Create a bain-marie by simmering water in a small-sized pan with the large bowl on top. Make sure water doesn’t touch the bowl. Add egg yolks and sugar, continuously stir with a whisk until it reaches 71°C/160°F. Add mascarpone and combine with the whisk. Set it aside.
3. Whip heavy cream to medium peaks. Fold cream into the egg mixture with a spatula.
4. To assemble; dip one ladyfinger at a time into the coffee mixture, 1 second on each side. Lay dipped ladyfinger at the bottom of the dish and continue until the first layer is completed. Spread half of the cream mixture. Continue with another layer of dipped ladyfingers and top with remaining cream. Cover the top with cling film and leave it to set overnight in the fridge.
5. Remove cling film and dust with cocoa powder. Enjoy!
