This is the easiest thing you can do with choux pastry. These bite-size puffs are topped with crunchy pearl sugar and baked until golden brown. They are the perfect little snack for people with a sweet tooth.
Makes 30
Ingredients
60 ml water
60 ml milk
Pinch of salt
60 gr unsalted butter
75 gr flour
3 large eggs
15 ml milk
Pearl sugar
Instructions
1. For the choux; heat water, milk, salt, and butter in a medium pan, until butter is completely melted. Add flour and mix. Let it cool.
2. Preheat the oven to 180°C/350°F.
3. In a small bowl, whisk one of the eggs. Set 1 tsp of it for later use. Add the remaining whisked egg to the pastry and beat with a spatula or mixer. Continue with the rest of the eggs one at a time, until the mixture can shape a V when dropped from a spatula. Transfer to a piping bag.
4. Prepare a baking sheet with parchment paper and pipe mounds of pastry with 3 cm diameter.
5. Prepare and apply an egg wash with 1 tsp whisked egg and milk. Top each with pearl sugar. Bake for 30 minutes. Leave it to cool in a non-working oven. Enjoy!
