Since we are getting close to Thanksgiving, I am still trying to decide what to bake. As we are all aware, not everybody will need a huge pie this year and I am thinking maybe my little humble Apple Pie will do for my small family. What are you guys planning to bake?
Makes 15cm/6inch pie
Ingredients
For the pie crust;
150 gr (1 1/4 cup) ap flour
1 gr (1/4 tsp) salt
113 gr (1/2 cup) unsalted butter, cut into small cubes
60 ml (1/4 cup) ice water
For the filling;
3 red apples
40 gr (3 tbsp butter)
65 gr (1/3 cup) sugar
12 gr (1 tbsp) brown sugar
4 gr (1 1/2 tsp) cinnamon
1 gr (1/2 tsp) nutmeg
5 gr (1 tsp) vanilla extract
8 gr (1 tbsp) ap flour
1 egg
Demerara sugar
Instructions
1. For the pie crust, mix flour and salt. Toss cubed butter in flour and break the butter into small half-walnut sized pieces with fingertips. Slowly add water and bring the dough together. You might need more or less water depending on the flour. Cover with cling film and leave to chill in the fridge for at least an hour.
2. For the filling; peel and core the apples. Cut into 2cm (3/4 inch) cubes. In a saucepan, melt the butter until brown bits start to appear at the bottom of the pan. Add the apples and cook for 5 minutes on medium heat. Add sugar, brown sugar, cinnamon, nutmeg, and vanilla. Mix to combine. Add flour and mix thoroughly, let it cook for 2 minutes. Leave the filling to cool completely.
3. Cut the dough into two pieces and roll each dough into rounds with 1/3 cm (1/8 inch) thickness. Line the pie dish with one of the rolled dough and fill with apple filling. Cut the other dough into 2 cm (3/4 inch) wide strips and use them to create a lattice on top of the apple filling. Chill the pie in the fridge for 30 minutes.
4. Preheat the oven to 180°C/350°F.
5. Whisk the egg and apply egg wash on top of the pie. Sprinkle demerara sugar and bake for 30 minutes or until golden brown. Enjoy!
