Peaches are finally in season and there is bothering better than a peach galette with a scoop of ice cream on a very very warm Summer's day!
Makes 4
Ingredients
For the pie crust
1 recipe of All Butter Pie Crust
For the filling
2 peaches, thinly sliced
8 gr cornstarch
20 gr sugar, and more to sprinkle on top
1/4 tsp vanilla extract or paste
Pinch of salt
For the egg wash
1 egg
1 tbsp milk
Instructions
1. For the filling, in a large bowl mix together peaches, cornstarch, sugar, vanilla, and a pinch of salt. Set aside and leave it for 15 minutes.
2. Prepare a baking sheet with parchment paper.
3. For the pie crust, prepare and roll the pie crust according to instructions. Cut 4 15 cm/6 inch circles. Transfer the circles to the baking sheet. Gently place the peach filling in the middle of the circles, leaving 2 cm/1 inch from the edges. Gently fold the excess dough over the filling.
4. Beat the egg and milk. Apply an even layer of egg wash to the dough and sprinkle with sugar. Transfer the baking sheet to the freezer for 15 minutes.
5. Meanwhile, preheat to oven to 190°C/375°F. Bake the galettes for 30-35 minutes or until golden brown. Leave them to cool. Enjoy!
